Rōti Modern Mediterranean is a fast-casual restaurant brand known for build-your-own bowls, salads, wraps and pitas. With restaurants in Minnesota, Washington, DC and Chicago, a recent move into Atlanta and a franchising programme on the way, the brand needed a website that could keep pace with growth and help hungry customers get from browsing to ordering with as little friction as possible.
In 2026 Roti, now part of Edible Brands, replaced its custom-coded site with Shopify. Shopify serves as the customer-facing discovery layer, while specialist restaurant systems continue to handle individual meal orders and catering. Work began on January 7, 2026 and the refreshed site launched on April 23, 2026. Year over year, conversion rate rose 132% and average order value increased 4%, and routine menu, location and campaign changes now take minutes instead of days.
About Roti Modern Mediterranean
Roti built its reputation on customisable Mediterranean food served quickly, with a menu of bowls, salads, wraps and pitas that guests can tailor to their taste, finished with the brand's signature sauces. The brand joined Edible Brands, whose portfolio also includes Edible Arrangements, and it is growing through new markets and franchising. Digital is central to that plan: Edible Brands' Chief Digital Officer, Erica Randerson, has said the business cannot afford to be slow in how it delivers a digital experience.
The Challenge
Roti's previous website was custom coded, which meant that everyday changes such as updating a menu item, adding restaurant details or launching a campaign had to go through developers. For a restaurant brand that adjusts menus, opens locations and runs promotions on a regular rhythm, that dependency slowed marketing down and tied up engineering time on low-value tasks.
The customer journey also needed work. Guests needed a clearer path from discovery to action: finding a nearby restaurant, exploring the menu, learning about catering and choosing a location to order from. Looking further ahead, the brand wanted a platform that could eventually sell its bottled signature sauces online without standing up a separate storefront and adding more complexity to its stack.
- A custom-coded site that required developer support for routine menu and location updates
- Marketing campaigns held up in an engineering queue
- An unclear path from discovering the brand to finding a restaurant and placing an order
- No easy route to sell packaged sauces without building a second storefront
- A growing footprint and franchise plans that would multiply content changes
The Solution
After weighing WordPress and other content management systems, Roti chose Shopify as its storefront and discovery layer. Rather than forcing every function onto one tool, the brand kept specialist restaurant platforms for ordering and used Shopify for what it does well: fast, flexible, brand-led pages that the marketing team can manage directly, with commerce ready to switch on when the sauce range launches. An implementation partner handled design, user experience, branding and technology, working closely with Edible Brands' in-house UX and digital experience leads.
Shopify as the discovery layer
The new site is built around large, appetising food photography, clear menus and catering content. Shopify gives the team a modern, fast front end without the maintenance burden of custom code, and its editing tools let marketers publish changes themselves.
Dedicated location pages
Every restaurant has its own page, making it easier for guests to find the nearest Roti, check details and move straight to ordering. As the brand opens new markets and franchise locations, new pages can be added without developer involvement.
Ordering and catering integrations
Individual meal orders are routed to Thanx, while catering orders run through Toast. Shopify links guests into the right system, so each specialist platform keeps doing its job while the brand controls the experience around it. Engineers now focus on back-end work such as order routing.
Built for packaged goods and loyalty
The architecture was designed with the next phase in mind. Planned extensions include selling Roti's packaged sauces directly through Shopify and relaunching the loyalty programme, without the need for a separate store.
Implementation Journey
The project ran on a tight schedule. Work began on January 7, 2026 and the refreshed site went live on April 23, 2026, a little over three months later. Alongside the platform change, Roti refreshed its brand presentation online, bringing in bold food photography, new location pages and expanded catering content. Edible Brands' in-house digital leads were involved throughout, and the leadership team deliberately built for future capabilities, such as packaged-goods commerce, even though they were not needed on day one. The approach has also become a template inside the group: Edible Brands is sharing Roti's delivery technology with Edible Arrangements, and edible.com is set to move to Shopify.
The Results
The new site has made it noticeably easier for guests to go from interest to action. Compared with the previous year, conversion rate is up 132% and average order value is up 4%. Engagement improved as well, with double-digit growth in engagement rate, time on site and events per session. Internally, the biggest shift is ownership: marketing and ecommerce teams now make routine updates without waiting on engineers, and the company says menu, location or campaign changes take minutes rather than days. That frees engineering capacity for the integration and routing work that keeps orders flowing.
- Conversion rate up 132% year over year
- Average order value up 4% year over year
- Double-digit growth in engagement rate, time on site and events per session
- Menu, location and campaign updates now take minutes instead of days
- Site rebuilt and launched between January 7 and April 23, 2026
Key Takeaways for Growing Businesses
Separate discovery from transaction systems
Restaurants do not need to force ordering, catering and content into one platform. Using a flexible storefront for discovery while keeping proven ordering tools can lift performance without disrupting kitchen operations.
Give marketing direct control
When every menu tweak needs a developer, campaigns slow down and engineers lose time. A platform that lets non-technical teams publish safely shortens time to market and keeps technical staff focused on higher-value work.
Build for the next revenue stream
Choosing a platform that can switch on commerce later, such as retail sauces or loyalty, avoids a second replatforming project when the business is ready to grow in a new direction.
